HDR is an acronym for High Dynamic Range. You take several shots using different exposures and meld them together using software. It may be why the sky has such good contrast. More likely he took shots specifically metered to the sky (light) and the pumpkin (dark) and then ran them through Photoshop CS3.
It's a tricky technique, and all too often shots come out looking rather fake. This one just plain looks good.
